After reading reviews, decided to choose Imperia Italian Double Cutter Pasta Machine SP150 as many said that cheap often breaks. This machine is sturdy and up to the job of rolling pasta dough. I had no probs with the clamp, although I moved the machine to the other side of the table to make it easier to use lefthanded. I am a complete novice and found all the reviews useful. I personally found that:
To stop pasta sticking, always lightly dust dough before putting it through the rollers. This stops it sticking and breaking. I rolled out all the sheets and let them dry about 15mins before cutting them with the tagliatelle cutters. I also cut each sheet in half to make them easier to feed through. To clean, I brush it with a fat brush (like a pastry brush or child's paintbrush)to get the flour off and then just wipe with a damp cloth. Don't over cook the pasta or it goes slimy!
